Perfect-For-Fall Apple Fennel Salad

Apple, Pomegranate and Fennel Salad 01-01-NZN_0285We have FALLen head over heels for fresh Fall fruits! While everyone else may be fawning and swooning over pumpkin-this, pumpkin-that, we’ll take a Garden Fresh apple, any day! If you’re as wild about apples as we are, you should see the other apple recipes we’ve dished out already! (Oh, did I mention that they’re both desserts?)

When it comes to this Autumn Salad, Chef Jodi loves the delicate balance of the ingredients: “It’s so light, and fresh! And the Gorgonzola balances out the sweetness.” It’s simply Perfect-For-Fall!

What You’ll Need:

3 cups baby greens
1 large apple slice, sliced
1 large fennel, sliced
1/2 cup pomegranate seeds
½ cup gorgonzola
½ cup spiced nuts (optional)

Place greens on large serving platter, add apple, fennel and pomegranate seeds sprinkle with blue cheese

Dressing
1 Tablespoon Dijon mustard
2 Tablespoons honey
2 Tablespoons citrus vinegar or juice
1 Tablespoon grated purple onion
½ cup olive oil

What to Do:

In a small bowl whisk mustard, honey and vinegar together, slowly drizzle in olive oil and whisk until well blended. Add grated onion and mix well, pour over salad and toss together.

Serves 4
