You can't beat this for a Valentine's treat! Enjoy.
What You'll Need:
5 1/2 oz. dark chocolate, coarsely chopped
14 oz. cold heavy cream
Three large egg whites
2 1/2 tablespoons sugar
Sweetened whipped cream
Shaved dark chocolate
What to Do:
Boil water in a double boiler. Then, place top pen or metal bowl on top and melt dark chocolate. Remove from heat and set aside. Beat the whipping cream until it forms soft peaks and set aside. Separate 3 tablespoons of whipped cream and add a teaspoon of powdered sugar to sweeten.
Beat egg whites until they form soft peaks gradually add sugar and continue beating until firm.
Fold egg whites into the dark chocolate. When the egg whites are almost completely incorporated, fold in the unsweetened whipped cream.
Cover the mousse with plastic wrap and refrigerate for approximately one hour until it has set.
Serve in martini classes or shooter classes and garnish with sweet and whip cream and shaved chocolate
Serves 4 to 6 large portions and 12 shooter portions
