Corn and Shiitake Mushrooms over Arugula and Goat Cheese

This is a fabulous salad — you will love this!!  Serve as a side dish or as a stand-alone meal.

What You’ll Need:
4 ears of corn, husked
½ pound fresh shitake mushrooms, sliced
2 teaspoons fresh minced garlic
2 Tablespoons olive oil
1 bag arugula
3 ounces goat cheese, crumbled
1/3 Cup walnuts
1 Tablespoon walnut oil
sea salt and fresh ground pepper, to taste

What to Do:

In a medium sauté pan, heat olive oil, add corn, shitake mushrooms and fresh garlic.  Sauté for several minutes until corn is golden brown and mushrooms are soft.

Place arugula in a serving bowl, and add crumbled goat cheese and walnuts. Toss with walnut oil (or you can use olive oil if you like).  Add corn and shitake mushrooms to salad.

Serve warm.  Enjoy!
