Aleppo and Citrus-Spiced Turkey

Want a new and exciting turkey recipe for Thanksgiving? Try this one out this season!

What You’ll Need:

For Rub:

1 17 – 24 pound turkey

¼ cup coriander

¼ cup cumin

¼ cup dried oregano

¼ cup Aleppo pepper

2 Tablespoons red or smoked salt

2 Tablespoons smoked paprika

2 Tablespoons orange rind

2 Tablespoons lime rind

2 tablespoons lemon rind

¼ cup fresh garlic, minced

½ cup olive oil

For Basting and Gravy:

1 – 2 cups chicken or turkey stock

¼ cup orange juice

¼ cup olive oil

¼ cup rub

What to Do:

In a medium size mixing bowl, add all spices for rub, citrus rind and garlic, then slowly add olive oil. Mix well until you have a paste. Reserve 1/3 cup for basting. Cover the reserve paste and store in refrigerator.

Slowly rub olive oil all over turkey. Generously smear paste under breast skin and all over turkey and under breast skin. Securely wrap in Saran wrap and store in refrigerator for 24 – 48 hours.

Bring turkey to room temperature and unwrap – then place on baking sheet.  Coat turkey with olive oil and more rub.  Roast or smoke according.  Baste turkey every hour. Heat reserved gravy and serve with carved turkey.
