This is so simple to make, and you can use leftover chicken to create this dish! Feel free to add grapes and walnuts, as well.
What You’ll Need:
2 cups diced boiled chicken
2 stalks celery, diced
6 scallions trimmed and sliced thinly or ¼ cup diced sweet onion
¾ cup mayonnaise
1 teaspoon Dijon Mustard
2 Tablespoons distilled white vinegar
2 Tablespoons fresh lemon juice
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon fresh or dried dill
1 Tablespoon salt free seasoning
1 teaspoon sea salt
½ teaspoon fresh ground pepper
What to Do:
In a large mixing bowl add chicken, celery and scallions. Then, toss.
In a medium mixing bowl, add mayonnaise, Dijon, lemon juice, vinegar, garlic and onion powder, seasoning, dill and salt and pepper. Combine dressing well and toss into chicken mixture.
Serve on a bed of lettuce with tomatoes and avocados. Spread on sandwiches or serve with crackers. Enjoy!
