What You’ll Need:
2-3 large sweet potatoes (or yams), sliced in wedges
2-3 Tablespoons of olive oil
2-3 Tablespoons Cajun spice (or blackened seasoning)
Blackened Seasoning
1 ½ Tablespoons paprika
1 Tablespoon cumin
1 Tablespoon coarse salt
1 Tablespoon garlic powder
1 Tablespoon onion powder
1 Tablespoon dried oregano
1 Tablespoon dried thyme
½ teaspoon cayenne pepper (you can add more cayenne if you like it hotter!)
½ teaspoon fresh ground pepper
1 Tablespoon olive oil
What to Do:
Preheat oven 450. Place wedges on large baking tray. Using pastry brush, paint both sides with olive oil.
Sprinkle generously with Cajun spice. Roast for 25 minutes. Enjoy!
