Beef Tenderloin with Herbed Horseradish Sauce

What You’ll Need

  • 4 lbs. beef tenderloin
  • 4 crushed garlic cloves
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon thyme
  • 1/4 teaspoon Tabasco
  • 1 cup soy sauce
  • 1/2 cup red wine
  • 1/2 cup olive oil
  • 1 bay leaf

Sauce

  • 1/2 cup sour cream
  • 2 Tablespoons horseradish
  • 1 Tablespoon chopped fresh parsley
  • 1 Tablespoon chopped fresh oregano, rosemary and basil
  • 1 teaspoon lemon juice
  • 1/2 teaspoon lemon zest
  • Salt and pepper, to taste

What to Do:

Combine Tabasco, soy sauce, wine, olive oil thyme, pepper, garlic and salt.

Roll meat into mixture to cover all sides. Add bay leaf and marinate at least 3 hours, turn occasionally.

For the sauce, mix all sauce ingredients together and refrigerate until needed.

You can grill meat until desired doneness or roast at 425 degrees for 10 minutes.  Reduce heat to 350 degrees and continue to cook for desired doneness. Slice diagonally and serve with horseradish sauce.
