Avocado Sauce

This sauce gives a fresh California twist on guacamole!  Great for quesadillas and fish tacos!

What You’ll Need:
3 – 4 firm-ripe medium avocados,

2 medium scallions, sliced

1/2 cup fresh cilantro, and additional whole leaves for garnish

2 tablespoons plus 2 teaspoons fresh lime juice

1 teaspoon jalapeno, no seeds

2 teaspoons fresh garlic

1 teaspoon cumin

4 tablespoons extra virgin olive oil

1 teaspoon coarse sea salt

½ teaspoon fresh cracked pepper

2 Tablespoons water, if needed

What to Do:
In a food processor (do not mash) add avocado, scallions, chopped cilantro, lime juice, jalapeno and up to 1/2 teaspoon salt depending on your tastes. Pulse until nice and creamy, may add water if too thick.

Pour into a serving bowl and serve.

Serves 8
