Artichoke, Shiitake Mushroom and Tomatoes Sauteed with Chicken or Fresh Fish
This is a delicious dish that we love to serve to our team-building events and cooking classes! Can be served over sautéed chicken or fish!
What You’ll Need:
4 Boneless chicken breasts, pounded, OR 4 fish filets (halibut or sea bass)
1lb shiitake mushrooms, sliced
1lb fresh plum tomatoes, diced, or 1 14-oz can diced tomatoes
1 can artichoke hearts, drained and chopped
1 Tablespoon fresh garlic, minced
2 Tablespoon olive oil
1 Tablespoon oregano
1 Tablespoon rosemary
1 teaspoon coarse sea salt
½ teaspoon red chili flakes or fresh ground pepper, optional
What to Do:
In a large sauté pan, heat olive oil over medium high heat. Add chicken cutlets (or fish), salt and pepper. Cooking each side for 3 – 4 minutes. Remove from pan and set aside.
Using the same pan, add an additional tablespoon of olive oil and heat, adding shiitake mushrooms, artichokes, tomatoes and garlic. Sauté for a few minutes, add rosemary and oregano, course salt and red chili flakes. Saute for ten minutes until saucy.
Plate chicken or fish filets; then spoon sauce over.
