Artichoke Chicken
This delicious dish is so versatile! Perfect for feeding a large crowd, as well as an intimate gathering. It’s also a big hit for our team-building events and gourmet cooking classes!
What You’ll Need:
1 whole chicken cut up in pieces
½ cup olive oil
1 jar capers
2 Tablespoons lemon juice
2 lemons slices and spread over chicken
Garlic powder
Fresh chopped oregano and thyme sprigs
1 bag of frozen artichokes
Salt and pepper, to taste
What to Do:
Preheat oven to 350 degrees.
Place chicken skin side down in baking dish. Then, add lemon juice, capers and their juice, fresh oregano and thyme and garlic powder. Pour capers over chicken.
Bake 30 minutes, add frozen artichokes and turn chicken to skin side up after another 30 minutes. That’s it – it’s that easy!
