October was filled to the brim with one-on-one classes and exciting group events. A month packed with unforgettable memories. But with November here, Lajollacooks4u finds itself beaming with joy and gratitude for all of the amazingness to come. The long awaited Lajollacooks4u cookbook is making it's way home this month! There is so much to be grateful for and just in time for the Thanksgiving holiday!
Lajollacooks4u aficionado, Patty Uribe, continued her one-on-one classes with Chef Jodi in October. The two focused on mouthwatering Mediterranean cuisine - a favorite culinary genre for the both Patty and Chef Jodi.
Together they experimented with some new recipes and savory creations that will soon join the Lajollacooks4u signature repertoire. The two avid cooks whipped up exotic dishes like muhammara dip, flatbread with zaatar, feta, sun-dried tomatoes and olives, baba ghanoush, persian beef patties with cucumber yogurt sauce and roasted moroccan salmon.
Chef Jodi met with a new guest foodie from Del Mar for a private cooking lesson.
Robin Nordhoff sought out Lajollacooks4u for cleverly delicious ways to entertain family and friends through simple and elegant recipes.Their pre-planned menu went out the window as the two ladies went on a creative culinary binge!
The two had a splendid time discussing marinades, rubs, and roasts both suitable and diverse for Robin's holiday events and party hosting.
"We had such a lovely time together, I hope to see Robin back again soon for some more delicious fun!" said Chef Jodi.
Friends, Laura and Susan, joined Chef Jodi for a wonderful tour of Little Italy's Farmers Market before settling into Chef Jodi's comfortable Italian-inspired villa for an evening of cooking and reminiscing.
As the ladies scouted local farmer's markets for fresh produce, they stumbled upon delicious romano string beans. Laura was whisked away to her childhood as she remembered her family's recipes filled with delicious Italian veggies. They purchased romano string beans and made an impromptu Italian recipe from Chef Jodi's repertoire: sautéed romano beans with tomatoes.
The rest of their menu was equally as delicious and inspiring. Together they made a tart with caramelized onions, pear, figs and gorgonzola, sea bass with artichoke, shitakes and tomato sauce, orzo with fresh lemon and feta, and a scrumptious apple tarte tartin for dessert!
Chef Jodi had a wonderful time teaching these ladies about the benefits of farm-to-table eating. But she wasn't the only one who enjoyed the experience, both Susan and Laura had such lovely things to say about their time at Lajollacooks4u.
"Thank you for sharing your heart, mind and home to teach others to cook. I learned so much!" said Laura. "God bless you and I hope to come again with more girlfriends!"
Susan loved the food and the setting: "A perfect day in every way," she said.
After 35 years apart, three childhood friends reconvened for a week of incredible culinary alchemy and the experience of a lifetime. Together, the group celebrated over 45 years of friendship with Lajollacooks4u through delicious food, incredible wine and rich, unforgettable memories.
The three women traveled from opposite ends of the country to vacation in San Diego and spend time at the Lajollacooks4u cooking school. With flights ranging from Northern California to Florida, the women arrived in SD to begin their gastronomic adventure with Chef Jodi.
Chef Jodi prepared a near weeklong culinary itinerary for the reunited friends, including foodie tours around San Diego, nights
of fine dining, and three signature Lajollacooks4u cooking classes. The women eagerly attacked their untapped skills with Chef Jodi and began a “tapas” themed cooking class immediately upon their arrival. Chef Jodi guided them through the art of preparing simple gourmet appetizers like Tuna Tartare, a Pear, Fig and Blue Cheese Flatbread, Steamed Artichokes, Fig and Olive Dip with Labneh Cheese, Spicy Tofu with Eggplant and Mini Chicken Sliders with Zaatar and Tzatziki Sauce. Their cocktail party also included elegant desserts that paired beautifully with specially imported wines.
As the women toured and partook in San Diego’s foodie scene with Chef Jodi, they reveled in the nostalgia and wonderful memories that the evocative aromas provoked. Chef Jodi shared in the women’s laughter and tears as everyone reminisced over both their shared history as well as u
pdates on their current lives. The atmosphere of music, tastes and smells were ideal in conjuring up wonderful memories.
Barb Goldsmith had many heart felt things to say about her time with Lajollacooks4u: “We were all able to reunite, thanks to the goodness, generosity, and creativity of Chef Jodi,” recounted Goldsmith. “Lajollacooks4u provided us with the same delicious feeling of warmth, comfort and familiarity that we had shared so many years before. The food was excellent and now we are all legally able to drink the wonderful wines she had provided for us. We were posting pictures throughout the trip and so many other friends expressed jealousy and then decided they would try to do the same thing with their friends. I’m only afraid that we started something so wonderful that we won’t be able to get a reservation next time we want to do this- which will definitely be sooner than later!”
Lajollacooks4u loves hosting intimate private culinary events like this one. "This is the reason I love to cook and the reason I want to teach," said Chef Jodi. "Food is sustenance for the soul as well as for the palette.”

Rounding off the month of October, Lajollacooks4u cooked up a storm with Southern Californian hotel investment group, Wolff Urban. Five of Wolff Urban's hotel management team joined Chef Jodi for an evening of competitive team building and, of course, amazing food!
Competition began in the garden as the Wolff Urban group sampled gourmet salt and olive oils to waken up their palettes. After participating in the taste-test, the group was ushered inside where they were divided into two teams.
As Chef Jodi discussed kitchen tips, techniques and skills, the Wolff Urban teams competed to create their elegant evening meal. The Antipasti menu began with Wild Mushroom and Pepperoni Pizza Rolls with Roasted Tomato Sauce. Followed by an elegant main course of Herb and Mustard Crusted Beef Tenderloin with a Brandy Sauce, Garlic and Truffle Oil Pomme Frites, and Roasted Zucchini and Portabella Mushrooms. For dessert, the teams indulged in a seasonal Apple Crisp with a Vanilla Goat Cheese Mousse.
President of Hotel Operations and party planner, David Cornish, had lovely things to say about his time at Lajollacooks4u. "Thank you so much Chef Jodi for the learning experience and the good food and wine. We had such a fantastic evening," he said.
Chef Jodi had such an amazing time with the Wolff Urban team and would love to see them back in her kitchen again soon!
